If you have blueberries…

Can I recommend the Lemon Blueberry Biscuits from Taste of Home here. Blueberries are in season in this part of the world. I may have already been back to the Remarkables Market, code for I bought something and then had to figure out what on earth to make! I picked this recipe because they sounded tasty (I love lemon), seemed relatively straightforward to make, and the reviews by others who had tried it were positive. And the photographic evidence below would indicate that they look like the photo!

For those of you who want to try the recipe two translations for you to save time are:

  • 1/4 cup of butter = 62.5 g
  • 400°F = 200°C

I would also point out that the 15 – 18 minutes cooking time is shorter if you are using fan-baked. Our current oven cooks really hot so I was keeping a close eye. After baking I realised that this recipe is originally from 1996, which I do not recall as being a common time for fan ovens, hence why mine cooked way faster. So the good old drop the temperature or adjust the time comes into play too.

And the verdict… delicious. I did not eat three in one day honest ;-P
